Choc-Marshmallow Bites

Lemon Chicken with Potato wedges and Garlic.

Recipe

4 boneless, skinless chicken breasts
500g (1 lb) potatoes, cut into wedges and parboiled
4 garlic cloves
grated rind and juice of 1 lemon
1 tablespoon olive oil
150 ml (1/4 pint) chicken stock
2 tablespoons chopped oregano
salt and pepper

Method

Cut 3 slits in each chicken breast, then place them in an ovenproof dish with the potatoes and garlic
Mix together the lemon rind and juice, olive oil and stock.
Season with salt and pepper and pour over the chicken and potatoes.
Cover the dish with foil and bake in a preheated oven at 200 degrees C(400 degrees F) gas mark 6, for 25 minutes. Remove the foil and continue to cook for another 5 minutes.
When the chicken and potatoes are cooked through, sprinkle with the oregano and serve.
